cooking: fennel orange salad

after making my vodka infusion, i had some leftover fennel
so i decided to use it to make a fresh orange salad
i used a mandolin to thinly slice the fennel
i used some of the 'fennel fur' or the tops and finely chopped that
i added it to my fennel and the fur into a small bowl
i then peeled an orange with a knife
and segmented it

you will be left with the membranes
i then used the leftover orange membrane and squeezed the juice into the bowl
add some olive oil, salt and pepper
it's fresh and crisp!
the orange is the key component, so make sure you get a piece with every bite!
