cooking: pickled red onions

i want to recreate a recipe i had last week at the Seattle Art Museum Cafe, Taste
to do this i had to prep some pickled red onion
oh these little red rings of glory!
gather all your supplies
medium red onion
peppercorns- i like rainbow ones because it adds color
bay leaves
using your handy mandolin, medium slice your red onion
i used about half the onion 
fill your pan with 3 cups of vinegar and 6 heaping teaspoons of sugar
add bay leaves and peppercorns
you decide how much... i eyeballed it!
check on your kitchen helper
10 fingers, 10 toes... we are ready to move on
when the brine just begins steaming add your onions
keep on stove top for 20 seconds
carefully transfer to a jar and let cool before refrigerating
stay tuned for the rest of the recipe
but until then toss these bad boys in salads, on burgers or anywhere you would put a pickle or an onion
