i don't make new year resolutions but i do try to change things that are not-so-great
my cooking is one of them
the food is good, but not good for you
craig has bad cholesterol and i know it so i need to change how i cook for him and our family
so i am going to try and start by featuring healthier recipes that are still tasty and delicious
since i am the picky foodie in the house
so i am recreating a greek salad i had at a great place here in seattle called Lola
its fresh, light and packed full of flavor
large dice a roma tomato and a quarter of an english cucumber
large dice some red onion and add a sprinkle of feta cheese
i used fat free and noticed no difference in taste
add some roughly chopped kalmata olives
season with salt, pepper, basil, oregano, mint and some olive oil
mix together and enjoy!
both kids ate this up... well kyler picked out the onions and aspen ate the tomatoes and cheese
but overall it was a success!
