cooking: zuppa toscana soup

i love olive garden
i know that it's fake italian food
but the one thing i can't get enough of is the zuppa toscana soup
its an easy week night dinner, uses only one pot and takes less than half an hour to make!
take 3 large sausages, decase them and add them to a large pot with olive oil and some red onion
when sausage is almost done cooking, add two potatoes cubes into 1 inch pieces
season with salt, pepper and red pepper flakes
when the potatoes are soft, add three cups of chicken broth
and three cups of fat free half and half
{ my version is healthier! }
simmer for 10 minutes for flavors to infuse
wash and chop a head of kale
add to your pot and put lid on
simmer until the kale cooks down
serve with some crusty bread and enjoy!
