cooking: OPA!

i try and keep a plethora of mediterranean ingredients in the house at all times
this ranges from and often includes feta cheese, kalmata olives, cucumber, artichokes, hummus, pita and tomato
why you ask?
because i love the fresh flavors and bold colors these ingredients have to offer
such as in this weekend's egg bake
i added a pillsbury pie crust to the whole ingredients for an egg bake and viola!
craig and i had thirds... we are pigs 
look at all those delicious layers
how could we have resisted?
and when i am in a quick bind for a weekday meal i can whip up something quick like this pasta salad
this takes a mere 15 minutes to make
just add feta, artichokes and some of the marinade with some pasta, blanched spinach, tomatoes and olives
or kyler's favorite after school snack
some grilled pita with hummus that i drizzle with some olive oil and season with salt and pepper
