cooking: basil garlic scallops

this dinner literally took 20 minutes to make!
it was light, summery and very fresh
take some fresh basil
 and process with salt, pepper, garlic and some olive oil
 dry your scallops
 sear in a hot pan with olive oil
you want a nice golden brown color on your scallops
 make a light summer dressing with fresh lemon, salt, pepper, olive oil and some tarragon
 make a salad with spring mix, parmesean cheese, black olives and your dressing
 garnish your plate with a slice of tomato and a dallop of your basil puree
 make your plate pretty :)
 then eat it!
