cooking: prosciutto wrapped chicken stuffed with gorgonzola cheese and apples

this is another lovely recipe from my pike place market cookbook
its a chicken breast stuffed with gorgonzola cheese and granny smith apples wrapped in proscuitto and dressed with a dijon mustard sauce
start by seasoning your chicken breasts with pepper 
the proscuitto will add enough salt so don't add any extra
butterfly your chicken to create a pocket for your stuffing
thinly slice your granny smith apples
and place them on one side of your chicken with the gorgonzola cheese
fold your chicken over and place onto a slice of proscuitto
you want the opening of the chicken to be on the inside so your apples and cheese are secured inside by the proscuitto
they should look like this
repeat these steps making one breast per person
in an oven safe pan sear your chicken in a tablespoon of olive oil
the proscuitto should be browned and you should be getting a good base of drippings in your pan for the sauce you are going to make later
sear all sides of the chicken 
place your pan in the oven and cook the chicken for another 15-20 minutes at 350 degrees
once the chicken is done set it aside and put your pan back on the burner
add a tablespoon of dijon mustard to your drippings and mix well
let it simmer and reduce for 5 minutes
sauce your chicken and serve
