cooking: shrimp ceviche

my brother recently got married in mexico this past spring
they got married at an all inclusive resort which meant... food 24-7 and since i was pregnant at the time... what was great news!
having such access was dangerous and in this i consumed more ceviche than humanly possible.
fish, squid... you name it. i ate it.
i fell in love.
so to bring a piece of mexico home, i decided to make a shrimp ceviche with some of the flavors i craved while in cancun
though ceviche isn't cooked using heated methods, the cirtus in the marinade denature the protiens in the seafood giving its cooked through appearance
 so start with fresh shrimp
the fresher the better
 clean, shell and get rid of the poop tube
cut the shrimp into bite sized pieces and place in a large bowl
 squeeze one whole lime into the bowl using the juice as the base of the marinade
 season with salt, pepper and red pepper flakes
let this sit for at least 10 minutes
best if kept in the fridge for up to 2 hours but 10 minutes is the bare minimum
 small chop some grape tomatoes
 some avocado
 and some purple onion
 add this to your bowl of shrimp
 with some cilantro 
 mix well and serve!
  the ceviche was devoured by all!
i think it's kinda snooty of us that we feed our 1 year old ceviche... but meh, whatever!
