cooking: smitten kitchen's leek latkes

craig asks all the time how i became such a good cook 
and my answer is always the same:

i read a recipe and do what it says.

now sometimes i wing it and use my instincts.
 sometimes i just use the ingredients listed for the flavor profile
but in this recipe, i did a step by step.
 i used the smitten kitchen cookbook by deb perelman.
her cooking blog is inspirational and her recipes are pretty bad ass!

so start your latkes by cleaning and small dicing 3 large leeks

 boil them in salted water for 3-4 minutes until softened not mushy

drain and then squeeze all the water from the leeks
add them to a bunch of small diced green onions, add 1 teaspoon of baking powder, salt and pepper and some cayenne pepper
once coated, add a large egg and mix well

in 2 tablespoons of olive oil, bump some of your mixture into the pan
use your spatula to shape and flatten your latkes
once browned on both sides place in oven at 250 degrees while you cook the rest of the mixture

 for garnish, i used fat free sour cream with some lemon juice mixed in to loosen the sauceleek latkes with lemon sour cream
stack your latkes and plop on some sour cream with freshly grated lemon zest

 i'm glad i followed deb's recipe because i am pretty smitten with these leek latkes!
